  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes, chopped
  • 1 teaspoon red pepper flakes (optional)
  • 8 oz pasta (penne, fettuccine, or your choice)
  • Fresh basil leaves for garnish

Instructions

  • Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  • Season the chicken breasts with salt, pepper, and Italian seasoning.
  • Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side until golden brown and cooked through. Remove the chicken and set it aside.
  • In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
  • Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes.
  • Add the heavy cream, Parmesan cheese, sun-dried tomatoes, and red pepper flakes. Stir until the sauce thickens, about 5-7 minutes.
  • Slice the cooked chicken and return it to the skillet. Toss to coat the chicken in the sauce.
  • Add the cooked pasta to the skillet and stir until everything is well combined and heated through.
  • Garnish with fresh basil leaves and serve immediately.

Notes

  • Substitute spinach or mushrooms for extra vegetables.
  • For a lighter version, use half-and-half instead of heavy cream.
  • Pair with a side of garlic bread and a green salad for a complete meal.
