With tender turkey, spaghetti, and a rich, cheesy sauce baked to golden perfection, it’s a family favorite that’s both hearty and easy to make. Perfect for weeknight dinners or cozy gatherings, this dish combines the flavors of Parmesan, mushrooms, and garlic for an irresistible meal.

  • 12 oz (340 g) spaghetti or fettuccine
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup (250 g) sliced mushrooms
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 3 cups (720 ml) chicken or turkey broth
  • 1 cup (240 ml) heavy cream
  • 2 cups (280 g) cooked turkey, shredded or diced
  • 1 cup (100 g) grated Parmesan cheese, divided
  • 1 cup (100 g) shredded mozzarella cheese
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup (50 g) breadcrumbs
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  • Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add the onion and sauté for 2–3 minutes until softened. Add the garlic and mushrooms, cooking for another 5 minutes until the mushrooms are tender. Remove from heat.
  • In the same skillet, melt the butter over medium heat. Stir in the flour and cook for 1–2 minutes to form a roux. Gradually whisk in the broth and heavy cream, stirring continuously until the sauce thickens.
  • Add the cooked turkey, 1/2 cup Parmesan cheese, and sautéed mushrooms to the sauce. Season with salt, pepper, and nutmeg (if using).
  • Combine the cooked spaghetti with the turkey mixture and transfer to the prepared baking dish. Spread evenly.
  • Sprinkle the remaining Parmesan cheese, mozzarella cheese, and breadcrumbs over the top.
  • Bake in the preheated oven for 20–25 minutes, or until the top is golden and bubbly.
  • Remove from the oven and let it cool slightly before garnishing with fresh parsley. Serve warm.

Notes

  • You can substitute chicken for turkey if desired.
  • For a lighter version, use milk instead of heavy cream.
  • Add peas or spinach to the mixture for extra veggies.
  • Serve with a side salad or garlic bread for a complete meal.
